Stocking variety of chutney powder in the kitchen serves many purposes. It can be an immediate side dish when you are running out of time to prepare chutney. It can also be additional accompaniment in the menu pairing with variety of rotis. And for a food blogger like me, chutney powder in a bowl is an essential prop in food photos. Since it is dry version of chutney, you can store for long and comes very handy at times. Today I am posting coconut chutney powder using coconut as primary ingredient. The aroma of coconut with all the roasted spices tastes truly great. Loved it.
The key to get the chutney powder right is to roast the ingredients perfectly. The lentils should turn slightly brown wafting nice aroma. As the coconut has lots of moisture content, it should be roasted well in medium flame till dry. This is crucial because moisture content would spoil the chutney powder sooner. Coconut chutney powder tastes more or less like wet chutney which is why I made it twice in a month.

Coconut Chutney Powder | Coconut Chutney Pudi
Ingredients
- 3 tsp Oil
- 1 tsp Mustard seeds
- 2 tbsp Split black gram (urad dal)
- 5 nos. Red chillies
- 1 Cup Fresh coconut grated
- 1/4 tsp Asafoetida (hing)
Instructions
- Heat a pan adding mustard seeds, split black gram, red chillies and roast constantly in medium flame. The lentils turn slightly brown, then transfer and let it cool.
- Add grated coconut to the same pan and roast till it becomes moisture free. It may take few minutes to get dry and turn little brown. Switch off once done.
- Take initially roasted ingredients in a mixer. Add tamarind, salt and powder coarsely.
- Include roasted coconut and asafoetida to the same mixer and whir it again.
- Coconut chutney powder is ready to serve. It pairs well with idli and dosa as side dish.
Notes
- Roast the spices in medium flame and ensure it's not burnt.
- After roasting the coconut should be moisture free and dry.
- Coconut chutney powder tastes good when coarsely powdered.
