An easy and impressive breakfast for you. What you have in the fridge? Dosa batter? Ok. Lets turn it in to a thick, crusty and veggie topped uttappa. Which is what I make using the left over batter. But in this post I made uttappa batter from the scratch like a serious food blogger. Yes, this batter is slightly coarse than normal dosa batter. And it takes it’s time to ferment well before being used for breakfast preparation.
Slightly coarse batter get raised after fermentation and can give porous texture with lots of airy holes. My little son has become fan of uttappa and calls it as mini – pizza or desi pizza. It’s been easy to pack interesting and healthy food for him now. I chop some colorful veggies like onion, carrot and tomato very finely which is then topped over mini uttappam on the griddle. The veggies cook nicely with wonderful crunch and get the caramelized look. Cutting each uttappa in to triangular shape gives him the feeling of pizza piece. And he enjoys eating them.
So at the end of the day, I feel immense satisfaction as I could pack healthy lunch which is of his choice. Two goals achieved with single recipe. How do you pack food for your kids?

Uttappa | Uttappam | Vegetable Uttappa
Ingredients
- 2 cups Rice
- 1/2 cup Split black gram (urad dal)
- 1 tsp Fenugreek seeds
- 1/2 cup Rice flakes
- 1.5 tsp Salt
For topping
- 1 no. Onion chopped
- 1/2 cup Carrot grated
- 1/4 cup Tomato chopped
- 1/4 cup Coriander leaves chopped
- 1/4 tsp Salt
Instructions
- Rinse the raw rice, lentils and rice flakes separately with enough water. Soak them separately for 2 to 3 hours. Rice flakes can be soaked for just 20 minutes.
- Drain all the water from lentils and transfer to mixer. Grind it to fine and fluffy batter adding water as needed. Transfer the batter to bowl.
- Next add soaked rice to the same mixer and grind finely include water as necessary. Transfer this batter to the same bowl.
- Finally, add soaked rice flakes and grind finely. Mix this with other batter and let it ferment for 8-10 hours.
- After the fermentation, the batter would have raised in volume. Now add salt and mix.
- For topping, take all veggies onion, carrot, tomato and coriander leaves in a bowl. Mix them with little salt. Next, heat tawa smearing some oil. Pour a ladle ful of batter at the center.
- Spread it little thicker and top it with veggies. Press the veggies on top so that they get inside uttappa. Flip and cook the other side after few seconds.
- Healthy and filling breakfast uttappa is ready to serve with coconut chutney.
Notes
- The batter should be fermented for good 10 hours.
- Uttappa should be thicker than normal dosa.
- Both the sides of uttappa should be cooked so that veggies on top get cooked nicely.
