Things I want you to know about this glossy looking wheat halwa: it has shiny texture and melts in the mouth in minutes. This royal sweet is prepared using whole wheat, sugar and ghee. And it takes 3 days all together to whip this up which seems quite long but ultimately feels worth. Wheat halwa or godhi halwa is most commonly prepared in Udupi – Mangalore region during weddings.
I was dreaming to make and post the recipe of godhi halwa since many years. I messed up making it 4 times which made me stubborn to succeed. Every failed attempt made me to learn the trick of this recipe and finally this week I made gorgeous looking wheat halwa. And I am proud about it.
Recipe needs the basic ingredients like wheat, sugar and ghee in standard measurements. Which is why we cannot alter the ingredient quantity. Once I messed up because I had used less sugar than mentioned. The key is to keep stirring the mixture till the right consistency is reached. Which is almost 1.30 hours. WHEAT HALWA | GODHI HALWA | UDUPI STYLE
Ingredients
- 1 cup Whole wheat
- 2.5 cup Sugar
- 1/4 tsp Orange food color
- 1 cup Ghee
- 2 tbsp Cashews
- 2 tsp Cardamom seeds
Instructions
- Take whole wheat in a wide bowl and rinse it many times. Soak it for 1 day in enough water. Then drain all the water and add it to mixer. Along with a cup of water, grind it to fine batter.
- Next, strain the batter using fine strainer and collect thick extract of wheat. Transfer the wheat residue to mixer again.
- Adding sufficient water grind it again to fine puree. Strain it again and collect it's extract in the same way.
- Let this collected wheat extract rest for a day. It will ferment and water floats above. Discard all the water and add a cup of fresh water. Mix well and bring it to the consistency of neeru dosa batter.
- Next heat a heavy bottom pan adding sugar and a cup of water. Let the sugar dissolve in low flame. Then carefully include wheat batter prepared above.
- Start cooking in medium flame with continuous stirring. It will begin to thicken. Include food color and continue stirring.
- Add cashew pieces, cardamom seeds and continue stirring.
- Next at regular intervals add ghee and keep stirring till it reaches the halwa consistency. It may take 1 hour to 1.30 hours. Squeeze a small lemon in between. At the final stage the mixture oozes ghee and it holds shape.
- Transfer to a tray and let it rest for 1 hour and then mark pieces.
- Tasty and delicious wheat halwa is ready to serve on this Diwali festival.
Notes
- Wheat halwa needs 3 days in total as it includes soaking and fermenting.
- Depending on the quality of wheat, it may require little more ghee.
- Fermenting the wheat extract is very important for the perfect texture.
- It needs to be stirred for at least 1 to 1.30 hours.
