This spicy shankarpali is something that stays crispy and crunchy for long. It doesn’t even drink lots oil but any one who eats one will not stop there. Because they are addictive like that. As you eat, it just makes you crave for more. That’s how a addictive snacks work. Shankarpali is as delicious as it sounds. I find there is something unique in the name of this snack. What is the base for it’s name is still ringing back in my mind. But above all, it’s one of my favorite snack. A cup of tea with this snack in my hand, makes me relish the sipping more than ever.
Spicy shankarpali is quite versatile according to me. To make them savory, variety of spices can be used. Here we I have kept very simple. Like basic spices, red chilly powder and salt are used. But you can play around. The major flavor which you can add is of mint leaves with some green chillies. This adds aroma of mint to the snack.
Next, you can add pepper powder instead of red chilly powder. Again it would taste unique. Suppose, you like sweet things. Then it’s also possible to make sweet shankarpali which is an easy yet delicious sweet thing. So why are you waiting, let’s head to kitchen to make this khara shankarpali.
Spicy Shankarpali | Khara Shankarpali | Shankarpali
Ingredients
- 1.5 cup All purpose flour(maida)
- 2 tbsp Medium rava (fine sooji)
- 1 tsp Cumin seeds
- 1 tsp Salt
- 1 tsp Red chilly powder
- Water as needed
- 2 tbsp Hot oil
- 2 cups Cooking Oil
Instructions
- In a wide bowl, take maida, fine rava and cumin seeds.
- Also add salt, red chilly powder. Give a quick mix. Meanwhile heat 2 tbsp of oil in a pan and add to the flour.
- Crumble the flour such that it holds shape. Adding water little by little, knead a stiff dough. Cover with damp cloth and let it rest for 10 minutes.
- After the resting the time, knead it once again. Divide the dough in to two and roll it to thin disc. Mark pieces like diamond using pizza cutter and separate the shankarpali.
- Heat up oil in a wok and as it heats up, drop the shankarpali in to hot oil. Deep fry till golden brown and drain the excess oil.
- Crispy snack spicy shankarpali is ready to serve with tea.
Notes
- You can add spices like mint, pepper as per your preference.
- Do not knead the dough too loose. It should be stiff and pliable.
- The crispy-ness lasts longer if stored in air tight container.
