Til Ke Laddu without Jaggery Syrup | Sri Krishna Janmashtami Recipes

Shri Krishna Janmashtami,  most well known festival of Udupi is fast approaching and it’s a gala time for everyone in this region. Every household is all set to prepare a number of snacks and Laddus. Preparations begin a week ahead…Things like buying a fresh batch of laddu ingredients like sesame seeds, peanuts etc, cleaning them, flouring the rice and split black gram for murukku(chakkuli) will be carried over the entire week. On the eve of Janmashtami after fasting the whole day, evenings are aromatic with all roasting, grinding, squeezing and frying things which will roar  hunger pangs.  But none of the condiments are allowed to touch now.


The actual sacred Pooja to Lord Krishna begins late night and continues for hours while all the laddus and snacks like chakkuli are offered to God. Only after these rituals the feast containing Kadubu(Idli cooked in steel cup), Kodakyana(yoghurt based curry), Coconut milk, number of laddus and chakkuli are served. Thus the most awaiting festival celebration concludes.

Today I am posting til ke laddu or white sesame laddu as one of the Janmashtami Recipe. You all need to try this as it is very simple tasting overwhelmingly awesome.  The nutty flavor of sesame seeds plus crunchy peanuts and cashews take this til ke laddu to next level. It is hassle free as no jaggery syrup is needed. Hope you make til ke laddu on festival eve and let me know your end result through comments.

Til Ke Laddu without Jaggery Syrup | Krishna Janmashtami Recipes

Ingredients

  • White sesame seeds- 1 cup
  • Jaggery- 3/4 to 1 cup
  • Pea nuts- Handful Optional
  • Cardamom powder- 1/2 tsp
  • Ghee- 2 tsp
  • Cashew nuts- few

Instructions

Preparation

  • In a heavy bottom wok or pan add white sesame seeds and roast them till they slightly puff up and change in color. You can hear the crackling sound too. Remove it and roast the peanuts if you are adding. Peanuts peel off as they get roasted. Switch off the flame. Let both roasted ingredients cool down.

Method

  • Add the roasted sesame seeds in to mixer jar and grind them coarse powder. As the sesame seeds ooze out oil, the powder becomes slightly stiff. Now add jaggery to the jar and grind again to combine both of them well.
  • Transfer the sesame seeds and jaggery mix to wide bowl. Meanwhile break the cashew nuts, crumble the pea nuts and add them to laddu mix. Add ghee and cardamom powder too.
  • Combine well all the ingredients in the bowl and roll handful of this mix as laddus.
  • Easy til ke laddu | white sesame laddu is ready. Enjoy this on "Krishna Jayanthi" after offering to Lord.

Note

  • Make sure white sesame is roasted well, otherwise the raw smell persists and laddu doesn't taste as it should.
  • Only after half grinding sesame seeds add jaggery so that both combine well and grind evenly.
  • Peanuts and cashews give extra crunch to the laddu, I recommend adding them.
  • If you are making in large quantity then, you roast them together but the process of grinding, rolling laddus should be done in batches.
  • The oil oozed out itself is enough to tie the laddus. So you can easily prepare this laddu without the hassale of jaggery syrup.

    The title said no jaggary yet you have it in the recipe, what alternative can you use if you do not have jaggery?

      Title says “No jaggery syrup” meaning you don’t have to prepare syrup out of jaggery. But jaggery has to be used as is.
