Last week, it was a kind of treasure in my inbox. Because I found an amazing recipe sent as an attachment. Are you guys laughing? For you it may be a trivial matter. But I call it as a treasure. For a food blogger like me, the recipes are precious like that. And when they are sent from my blog readers or followers, I am lot more excited to try out those. This tapioca vada is one such recipe which came across my mail through Pratibha Rao somewhere in mid of last week. And today I am here to present you the same with all happy vibes of the that snack.
As I read through tapioca vada recipe, I found it so very easy. Because there are hardly any fancy ingredients and entire process took just 30 minutes. And you don’t believe, I loved my kitchen with wafted flavors of vada. It was so genuine and awesome.
When you look below at the pictures, it may seem like maddur vada, but it isn’t. This tapioca vada isn’t crispy like maddur vada. They taste uniquely yummy with soft texture of tapioca. The perfect spices and greens like coriander and curry leaves elevate the taste to next level. The kids who are on vacation now, are already demanding next batch of tapioca vada. And I have the veggie in my pantry waiting to be transformed as an awesome snack. So how about you guys?
Tapioca Vada | Maragenasina Vada Recipe
Ingredients
- Tapioca(maragenasu)- 1 medium sized
- Green chillies- 2 nos.
- Salt- 1.5 tsp
- Rice powder- 2 tbsp
- Curry leaves- Handful
- Coriander leaves- Handful
- Cooking oil- Enough to deep fry

Method
- Peel off the tapioca and trim the edges. Grate using a sharp grater and measure. I got two cups of grated tapioca.
- Next add grated tapioca in to a mixer jar for grinding.
- Include green chillies and give grind to a coarse paste without adding any water. Transfer it to a bowl.
- Next add chopped curry leaves, coriander leaves, rice powder and salt.
- Mix everything very well in to soft yet stiff dough. The consistency shouldn't be thin. Add rice powder if needed at this stage. Divide the dough in to 15 equal part and flatten each in the shape of vada.
- Meanwhile heat a wok with enough oil for deep frying. When the oil is hot enough fro frying, drop a batch of vada in to it. Fry them till the color changes to brown. Once done remove from oil and drain on kitchen tissue paper.
- Very delicious tapioca vada is ready to serve with a cup of coffee/tea.
Notes
- Do not add water to grind the tapioca, it oozes out enough water for ease of grinding.
- The dough should have thick consistency of shaping in to vada. If not, include some rice powder.
- Adjust the spice as per your taste buds.
- The vada tastes too good when consumed hot.
