Peel off the tapioca and trim the edges. Grate using a sharp grater and measure. I got two cups of grated tapioca.
Next add grated tapioca in to a mixer jar for grinding.
Include green chillies and give grind to a coarse paste without adding any water. Transfer it to a bowl.
Next add chopped curry leaves, coriander leaves, rice powder and salt.
Mix everything very well in to soft yet stiff dough. The consistency shouldn't be thin. Add rice powder if needed at this stage. Divide the dough in to 15 equal part and flatten each in the shape of vada.
Meanwhile heat a wok with enough oil for deep frying. When the oil is hot enough fro frying, drop a batch of vada in to it. Fry them till the color changes to brown. Once done remove from oil and drain on kitchen tissue paper.
Very delicious tapioca vada is ready to serve with a cup of coffee/tea.
