Gorgeous looking foods are always my top favorites. I easily tempt to prepare food that probably turn captivating to my eyes while being delicious. And when making this sweet corn kheer, I was damn sure about it’s appearance. Because I am using these cute sweet corns and it surely plays the color magic on food. This sweet thing happened to be my ever satisfying dessert lately. And I am loving it.
If you are a person to love dairy based desserts in your life, then this dessert is meant for you. It’s creamy thick which lets you feel the coarse bits of corn in the mouth. The sweet corn requires to be minced to sand like texture which is then sauteed in ghee for few minutes. This process subsides the raw smell from the sweet corn and gives it glossy texture. Further it is cooked in milk, sugar and topped with all nuts. I loved the inclusion of almonds, cashews and saffron in this kheer. Saffron is really magical in all kheer recipes as it infuses cozy aroma and boosts our appetite.
The best part of sweet corn kheer is it needs less sugar. I used only 2 tbsp and the sweetness was absolutely perfect for my taste-buds. The kheer turned bit thick while serving, so I had to include some more milk to bring it to the right consistency. So initially you can keep it little thin or water-y.
Sweet Corn Kheer | Amazing Dessert
Ingredients
- Sweet corn(fresh or frozen) - 1 cup
- Milk- 2 cups + 1/4 cup
- Sugar- 2.5 tbsp
- Ghee- 1 tbsp
- Cardamom powder- 1/4 tsp
- Saffron strands- Few
- Dryfruits- cashew+almond
Instructions
Method
- If you are using corn cob, grate the corns and measure one cup of sweet corn. Take it in a mixer jar adding 1/4 cup milk.
- Grind them together to coarse paste. Keep it aside. Next heat a cooking pan adding ghee.
- Transfer sweet corn paste to ghee and cook it in medium flame with constant stirring.
- As you stir andcook, moisture evaporates from sweet corn paste. The raw smell subsides and the mixture leaves pan. Color changes to darker shade. Switch off the flame.
- Next include milk and let it cook in low flame till it thickens.
- Include sugar, cardamom powder, saffron strands and roasted nuts. Let it boil for a minute or two. Switch off once done.
- Gorgeously delicious sweet corn kheer is ready to serve.
Notes
- You can use either frozen or fresh sweet corn.
- It needs less sugar as sweet corn is naturally sweet. Adjust as per your taste buds.
- The kheer thickens with time, so adjust consistency while serving.
