Sweet Corn Kheer | Amazing Dessert

Ingredients

  • Sweet corn(fresh or frozen) - 1 cup
  • Milk- 2 cups + 1/4 cup
  • Sugar- 2.5 tbsp
  • Ghee- 1 tbsp
  • Cardamom powder- 1/4 tsp
  • Saffron strands- Few
  • Dryfruits- cashew+almond

Instructions

Method

  • If you are using corn cob, grate the corns and measure one cup of sweet corn. Take it in a mixer jar adding 1/4 cup milk.
  • Grind them together to coarse paste. Keep it aside. Next heat a cooking pan adding ghee.
  • Transfer sweet corn paste to ghee and cook it in medium flame with constant stirring.
  • As you stir andcook, moisture evaporates from sweet corn paste. The raw smell subsides and the mixture leaves pan. Color changes to darker shade. Switch off the flame.
  • Next include milk and let it cook in low flame till it thickens.
  • Include sugar, cardamom powder, saffron strands and roasted nuts. Let it boil for a minute or two. Switch off once done.
  • Gorgeously delicious sweet corn kheer is ready to serve.

Notes

  • You can use either frozen or fresh sweet corn.
  • It needs less sugar as sweet corn is naturally sweet. Adjust as per your taste buds.
  • The kheer thickens with time, so adjust consistency while serving.
