Monsoon doesn’t feel like monsoon if I don’t eat some good food of MONSOON kind. Meaning the season of rains brings in that exclusive appetite which is not so in other seasons. Like, say deep fried goody, street food and chaats seem to be more appetizing in this season. I never let the chance to go with out some deep fried, spicy food of my choice at my home. A plateful of vegetable bonda accompanied by coconut chutney along with a cup of hot masala tea is what I have in store for you. Will you join me for a while?


Vegetable bonda - Veg bonda

Vegetable bonda has lots of vegetables that are well cooked and spiced up with variety of spice powders in the kitchen. It has most flavors and right amount of spice. This makes the stuffing, which is dipped in gram flour batter. The batter coats the stuffing and after deep frying you have a yummy snack of the season.

You need to keep note of two things. The veggies can be your choice but potato shouldn’t be skipped. It binds all the veggies like a ball, so good amount of potato mash is needed. Secondly, the gram flour batter shouldn’t be thin. In that case the stuffing will not be coated well. Slightly thicker batter would work nicely.

Vegetable Bonda | Veg Bonda Recipe

Vegetable bonda is a wonderful snack which is best to eat during winter and monsoon season.

Ingredients

  • 1 cup Potato cubed
  • 3/4 cup Beans chopped
  • 1/2 cup Carrot chopped
  • 1/2 cup Beetroot cubed
  • 1/4 cup Peas
  • 1/2 cup Onion chopped
  • 1 tsp Ginger chopped
  • 1 tsp Green chillies chopped
  • 1 tsp Salt
  • 1/2 tsp Turmeric powder
  • 1 tsp Garam masala
  • 1 tsp Coriander powder
  • 1 tsp Cumin powder
  • 1 tbsp Coriander leaves chopped
  • 2 tsp Lemon juice
  • 3 cup Cooking Oil to deep fry

To Temper

  • 2 tsp Oil
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Cumin seeds

For batter

  • 1.5 cup Gram flour
  • 1/2 cup Rice flour
  • 1 tsp Salt
  • 1 tsp Red chilly powder

Instructions

  • Take all the veggies(potato, carrot, beans, beetroot and peas) in a vessel and add salt to it. Pressure cook the veggies for 5 whistles or until soft. Meanwhile heat a pan with oil, mustard seeds and cumin seeds. When they splutter include ginger, green chillies, onion and saute.

  • When the onion turn translucent add salt, turmeric powder, garam masala, coriander powder and cumin powder. Saute well.

  • Next include all cooked veggies and mash them together.

  • Add coriander leaves and squeeze lemon. Mix well and make lemon sized balls out of it. Keep aside till use.

  • Next in a wide bowl add gram flour, rice flour, salt and red chilly powder. Give a quick mix. Adding water incrementally, make batter which is bit thicker in consistency.
  • Heat oil in a heavy bottom wok. And take the stuffing ball, dip it in gram flour batter such that batter covers it completely. Slowly drop this in to hot oil and deep fry till golden brown. Once done, remove and drain on kitchen tissue.

  • Wonderful snack vegetable bonda is ready to serve with tea.

Notes

  • You can choose the veggies according to your preferences. But potato acts as binding veggie, so do not skip it.
  • Also quantity of potato should be bit more than other veggies.
  • The veggies should be cooked well otherwise you cannot make balls out of it.
  • The gram flour batter should be bit thicker, otherwise it will not coat the stuffing.
  • Adjust the spices according to your choice.
