Rice Bath | Vegetable Rice Bath in Karnataka Style

Today, it’s a working women friendly recipe. Or for those who pack lunch boxes for husband, kids and self in the morning early hours. I know, morning hours pass crazily as everything centered around kitchen and cooking. Breakfast preparation and lunch packing everyday seems so much hectic as it’s time-bound. If you look for an easy one pot meal kind of recipe, then this rice bath is for you.


Vegetable rice bath has veggies, spice flavors and ground mint plus spice puree. Rice cooked in such flavor oozing masala tastes so much good. Grain separated rice bath with a comforting onion-tomato raita is so much filling and energy giving. Isn’t it?

Any one with hunger bell ringing aloud, opens such a lunch box which has awesome rice bath like this, would be ever thankful to the one who packed it. Because the value of good food is better known to a person who is hungry. I always feel this gratefulness whenever I sit in front of my food plate. Before I begin, I thank God and the person who grow food for me. Unless a former grows grains in the field, it can never reach my plate. I bow you former!!

Rice Bath | Rice Bath in Karnataka Style

If you are looking for easy and quick lunch or dinner recipe then it is rice bath. With lots of flavors and vegetables it's a healthy lunch box option too.

Ingredients

  • 1.5 cup Rice
  • 1/4 cup carrot chopped
  • 1/4 cup beans chopped
  • 2 tbsp Green peas fresh or frozen
  • 1/4 cup onion chopped
  • 1/4 cup tomato chopped
  • 1.5 tsp salt
  • 1/4 tsp Turmeric powder
  • 2 tsp Lemon juice

To grind

  • 6 cloves Garlic
  • 2" piece Ginger
  • 2 nos. Green chillies
  • 2" piece cinnamon
  • 4 nos Cloves
  • 1 no. Cardamom
  • 1 tsp Fennel seeds
  • 1 tsp Coriander seeds
  • 2 tbsp Coconut
  • 1 tbsp Mint leaves

To temper

  • 1 tbsp Ghee
  • 1 tbsp oil
  • 1 no. bay leaf
  • 1" piece cinnamon
  • 4 nos. cloves
  • 2 nos. cardamom

Instructions

  • Take rice in a vessel and rinse it 3 to 4 times with enough water and soak it for 15-20 minutes. Next in a pan add oil, garlic, ginger, green chillies, cinnamon, cloves, cardamom, fennel seeds and coriander seeds. Saute well for few minutes till all are roasted. Next include coconut and mint leaves and continue sauteing for few seconds.

  • Transfer all the roasted ingredients to mixer and grind to fine puree along with water. Next, heat a pressure cooker adding ghee, oil, bay leaf, cinnamon, cloves and cardamom. Saute for few seconds.

  • Next, include onion and continue sauteing till onion turn translucent. Next add tomato and saute till mushy.

  • When tomatoes are done, add ground masala. Saute till raw smell subsides. Now, add all the veggies and mix well.

  • Next include 3 cups of water, soaked rice, salt and turmeric powder.

  • Give a nice stir, squeeze a lemon and pressure cook for 3 whistles. When the pressures subsides naturally, open the lid and serve.

  • Healthy and tasty rice bath is ready to serve with raita.

Notes

  • Roast the ingredients in medium flame and do not over do it.
  • You can include coriander leaves too along with mint leaves. Mint leaves give nice aroma, so do not skip.
  • Rice to water ratio is 1:2. Soaking rice helps it to cook grain separated.
