Hi guys !! After 3 years of break, here I am updating the blog with a recipe. The YouTube channel sucked in all my time and I didn’t turn up to update this space which was my only companion for many years. Before I begin, let me ask do you guys still visit this space? It’s a curry recipe today which is locally called as “KOOTU” where multiple veggies are used up. If you don’t have a particular type of veggie in your pantry that can make up a curry, then mix all left over veggies and prepare this “Kootu”. This recipe is followed when cooking kootu in large quantity for a large crowd in a ceremony. Relish the unique taste as it stand out from normal rice side dish.
ಸಮಾರಾಧನೆಯ ಕೂಟು | Kootu Recipe
Ingredients
- 1/4 cup Pigeon pea lentils (toor dal)
- 1 cup Beans
- 1/2 cup Carrot cubes
- 1/2 cup Potato cubes
- 1 cup Sweet pumpkin
- 2 tbsp Green peas
- 2 tbsp Peanuts
- Tamarind lemon sized
- 1 tsp Jaggery
TO ROAST and GRIND
- 1 tsp Chick pea lentils
- 3 tsp White lentils
- 1 tbsp Coriander seeds
- 3 to 4 nos. Red chillies
- 1/4 tsp Black pepper
- 1/2 cup Coconut
Tempering Ingredient
- 1 tbsp Oil
- 1 tsp Mustard seeds
- Few nos. Curry leaves
Instructions
- As a first step, cook the pigeon pea lentils (toor dal) with a cup of water and turmeric powder. Along with this cook the veggies like beans, potato and carrot. Use pressure cooker for faster cooking.
- In a vessel, cook sweet pumpkin and green peas with some water. This cooks faster directly on stove top itself (It may get dissolved in pressure cooker).
- Now, while veggies are cooking, roast and grind the spices along with coconut. They are mentioned under "Roast and Grind ingredient list above"
- Combine the veggies from pressure cooker with that of vessel. Add the masala prepared in above step.
- Add tamarind juice, jaggery and salt. Adjust water and bring it to good boil.
- Heat a small wok and all the tempering ingredients. Let the mustard seeds splutter, pour it over kootu.
