Food blogging has reared some new interests in me, which I never knew existed before, like photography. I just used to appreciate and love beautifully photographed pictures before.  I never bothered  about the technicalities associated with photography. Seriously!!!! Now I have no option but to learn photography everyday.  It’s the incredible shot of food that catches the readers and insists them to stop by to have a look. The ideal picture is one in which food actually pops up and makes one to drool.


In food blogging,  photography plays a significant role to which I should pay a lot more attention. I believe in doing work with 1% improvement every time and this applies to my food photography too. In these 2 years of my food blog journey every day is a class where I learn something new. Let me know how is the below food photo, is it good? lacks something? through your comments. cucumber fritters

Cucumber fritters, sounds weird is it? I know. Cucumber, the  humble juicy vegetable has always been found in recipes like salad and raita but the recipes like cucumber fritter and cucumber sweet dosa stand out. Grated  and  squeezed  cucumber is mixed with sooji (rava) and rice flour. The rice flour and medium rava are appropriate for binding,  spices and flavors of green chillies and curry leaves make the cucumber fritter  semi-crispy, with all the crunchiness of onion it tastes deliciously awesome. The heady aroma of cucumber while frying the fritters in oil, should be felt and experienced in your own kitchen. That’s super fantastic.

Ingredients

  • Cucumber- 2 no. or grated cucumber- 2 cups
  • Medium rava- 1/2 cup
  • Rice flour- 1/2 cup
  • Green chillies- 2 to 3 nos.
  • Ginger- Small piece
  • Salt- 1 tsp
  • Onion- 1 small
  • Curry leaves- few
  • Coriander leaves- Handful
  • Cooking oil- Enough for deep fry

Instructions

Preparation

  • Finely chop green chilles, ginger, onion, curry leaves and coriander leaves. Keep them aside till use.

Method

  • Wash and pat dry cucumber, cut it vertically in to two halves. Scoop out the seeds from it and grate it using grater. Squeeze the grated cucumber and discard the excess water.
  • Heat a wok adding rice flour, roast it in medium flame till the flour becomes warm. Once done, transfer the roasted rice flour to a wide bowl and subseqently roast the medium rava. When rava becomes warm, switch off the flame and combine it with rice flour.
  • Combine all the other ingredients like chopped onion, green chillies, ginger, curry leaves and coriander leaves with roasted rava and rice flour in bowl and mix it well using your hands. You will obtain the dough of medium thick consistency.
  • Now scoop out lemon sized dough, roll it in to ball and pat it on your palm to get the shape of fritter. You can keep a batch of such cucumber fritters ready to fry.
  • Heat oil in a wok and when it gets heated up slowly drop the patted cucumber fritters in to oil and fry them till they turn to brown color. Then drain them on kitchen tissue paper. Repeat the process with rest of the dough.
  • Cucumber fritters are ready to serve as tea time snack.

Note:

  • Do not let the rice flour or rava to change their color while roasting.
  • Squeeze out the excess water from grated cucumber completely, otherwise the dough may become thin. If at all if you feel the dough as thick or dry then you can make use of same squeezed water.
  • Adding onion is optional, you can skip it.
