Cucumber Dosa!!! Yes you heard it right. Cucumber not only a veggie to be used in salads, it can be used in dosas, idlies and desserts as well. It is said that any veggie or fruit given to udupi-mangalore region women, they will come up with a dosa variety using it. True…Believe me even the flowers of pumpkin creeper is being used in preparing dosas.. Amazing isn’t it? Coming back to today’s post, Cucumber sweet dosas impart nice flavors of cucumber, jaggery and cardamom. It is so aromatic that one tempts to eat them while it is still on skillet. It can be had as either breakfast or evening snack. The best accompaniment with this dosa is Ghee. Lets see the recipe.
Cucumber Dosa(sweet)/Cucumber Sweet Dosa Recipe
Servings: 6 -8
Ingredients
- Raw Rice/Dosa Rice- 1 cup
- Jaggery- 3/4 cup
- Grated coconut- 3/4 cup
- Cucumber- 1 big or Grated cucumber 1 cup
- Salt- 1/2 to 3/4 teaspoon
- Cardamom- 3 pods
- Ghee - Few teaspoon
- Oil to cook dosas
Instructions
Preparation
- Wash and soak rice in water for about two hours.
- Remove seeds from cucumber and grate it. Reserve the extra water content from grated cucumber. Keep it aside.
Method
- Drain the soaked rice and grind it along with jaggery, grated coconut and peeled cardamom. Add the reserved cucumber water for grinding. The consistency of the batter should be just like normal dosa batter. So add water accordingly.
- Transfer the batter in to a bowl and add grated cucumber and salt to it. Mix well. Cucumber dosa batter is ready now.
- Heat a dosa skillet and spread a tea spoon of oil on it. Pour a ladleful of cucumber dosa batter at the center of skillet and spread it in to dosa form using back of ladle. Do not make too thin dosas.
- Now drizzle some ghee on cucumber dosa and let it cook with closed lid in low flame.Once done, using a flat spatula remove dosa from the skillet. Turn it to other side to cook for a while.
- Repeat the process with rest of the batter. Serve these cucumber sweet dosas with ghee. It's amazing taste and flavor will make you to forget your diet.
Note:
- Jaggery makes the batter watery, so initially run mixer with rice, jaggery, cardamom and coconut without any water. After a while check to see how much water needed and add the reserved cucumber water accordingly.
- I have grated cucumber without peeling, as it gives nice green color to dosas. If you like, can peel the cucumber and grate.
- Removing the seeds of cucumber is mandatory, otherwise it makes the batter running.
- Do not make thin dosas, it may stick to the skillet and removing would be tedious.
