Long beans are well known as “Alasande” in Udupi. Many of the Udupi residents grow this veggie in their home garden. My daughter loves to eat raw long beans. Long beans palya/stir fry and avial are the frequent long beans recipes at our home. It goes very well as side dish/accompaniment with Rice-rasam combo. We can have it as chapati side dish too. Long beans Recipe/Long beans palya/Long beans stir fry Recipe
Ingredients
- Long beans- 1 bunch or 25 to 30 nos.
- Cumin seeds- 3/4 tea spoon
- Red chilly- 1 no.
- Grated coconut- Fist ful
- Salt- 1 tea spoon
- Turmeric powder- 1/4 tea spoon
- Jaggery- Indian gooseberry size
Seasoning Ingredients
- Cooking oil- 2 tea spoon
- Mustard seeds- 1 tea spoon
- Urad dal/ Split black gram- 1/2 tea spoon
- Red chilly- 1 no.
- Curry leaves- few
Instructions
Preparation
- Wash and clean the long beans and chop it finely.
Method
- Heat a Kadai/pan adding cooking oil, mustard seeds, urad dal, broken red chilly and curry leaves. Once the mustard seeds splutter add the finely chopped long beans. Saute for a while.
- Now add turmeric powder, salt and jaggery. Add little water and Let it be on low flame till the long beans gets cooked. Stir in between.
- Meanwhile add grated coconut, cumin seeds and red chilly into a mixer and grind it coarsely. Add this coconut masala to the cooked long beans and stir it well. Let it be on flame for a while and then switch it off.
- Long beans palya/stir fry is ready to be served. Enjoy this long beans recipe with rice-rasam combo.
Note:
- Long beans gets cooked very fast,so ensure it does not get over cooked.
- If you need more spicyness, increase the red chillies.
