Kashi Halwa is a sweet dish prepared with Ash gourd and quite popular in Udupi-Mangalore. This is one of many desserts that is served in many function feasts here. Kashi halwa tastes awesome and it just melts in mouth. Though it is a laborious task to prepare this sweet, you feel the efforts are worth when you taste it. So please try once…. Here goes the recipe.

Kashi Halwa | Ash Gourd Halwa | Ash Gourd Recipes

Kashi halwa is a scrumptious dessert that melts in your mouth. It is prepared using ash gourd, sugar and ghee as main ingredients.

Ingredients

  • Grated ashgourd- 2 cups
  • Sugar- 3/4 cup
  • Ghee- 3 tbsp
  • Raisins- 1 tbsp
  • Cashew-1 tbsp
  • Cardamom powder- 1/2 tsp
  • Saffron strands or food color- 1/4 tsp

Instructions

Preparation

  • Cut the ash gourd in to big pieces. Peel them off and scoop all the seeds. Grate it's kernel and measure 2 cups.

Method

  • In a heavy bottom wok or pan, add 2 cups of grated ashgourd and cook it over medium heat until all the water evaporates and ash gourd gets cooked. Keep stirring regularly otherwise it will get burnt. As the vegetable oozes out lot of water this step will take around 15 to 20 minutes of time. When ash gourd it dry, include sugar.

  • Continue cooking until all the sugar is absorbed. Next add saffron strands and stir. Saffron strands give nice color to halwa. As you continue cooking, the mixture comes together and reduces in volume. Now add ghee little by little.

  • As the ghee is absorbed, continue adding ghee with constant stirring. At one stage, the mixture leaves pan, then switch off the flame. Finally add cardamom powder and ghee roasted cashews and raisins. And give a nice mix.

  • Mouth watering ash gourd halwa is ready. Yummy...

Note:

  • The ash gourd should be cooked well before adding sugar. You can increase sugar as per your taste buds.
  • Adding a pinch of artificial color or turmeric powder will also give color to halwa.

    I have once tried this Kashi Halwa. It’s perfect for a dessert. Didn’t know though that it has turmeric in it. Thanks for sharing this piece!

      U can use saffron in place of turmeric.

    Just finished a whole cup of lip smacking halwa. Thx 2 ur recipe, it turned out wonderful. Even my dog’s gone crazy coz of the delicious sweet smell and has been pestering me for some halwa!!!!
