Today I am posting an easy breakfast/ snack recipe that can be prepared in a jiffy. Avalakki upkari/bajil upkari was a popular breakfast dish in most marriage functions of 1980’s. Later it got replaced by Idli sambar. For breakfast, upkari is always served in combo with uppittu | upama. This combo is most commonly called as “bajil-sajjige” in Tulu. I love this recipe so much and can have it at any time. Here goes the recipe. If you have not tried it till now, you must try this now.
Avalakki Upkari Recipe
Ingredients
- Thin rice flakes/beaten rice flakes- 2 cup
- Grated coconut- 1 cup
- Coriander seeds- 1 tsp
- Cumin seeds- 1 tsp
- Red chilly byadagi- 2
- Sugar- 2 tsp
- Salt- 1tsp or to taste
- Coriander leaves- handful
For seasoning
- Mustard seeds- 1 tsp
- Urad dal- 1/2 tsp
- Curry leaves- 1 strand
- Red chilly- 1
- Oil- 2 tsp
Instructions
Method
- Heat seasoning pan and add oil, mustard seeds, urad dal, red chilly, curry leaves to it. When mustard seeds splutter and urad dal changes in color switch off the flame. Keep it aside.
- Grind coriander seeds, cumin seeds and red chillies coarsely in a mixer.
- Now take a big mixing bowl with grated coconut, ground masala from step 2, sugar, salt, seasoning prepared above and coriander leaves. Mix it well using your hands. Now the avalakki upkari mix is ready.
- Add avalakki/thin flakes to the upkari mix and blend it well again with your hands. Now avalakki upkari is ready. Avalakki absorbs the flavors, spices and becomes soft. So serve it after 15 minutes.
- It is very good snack for evening tea time. It can be served for breakfast along with soji upama/uppittu.
Note:
- You can add onions as variation.
- If you are in hurry and have no time to powder coriander seeds, cumin seeds and red chilly then you can use 1 to 2 tea spoons of udupi rasam powder.
- Red chillies can be substituted by green chillies as per ones taste.
