A wholesome, filling, veggie rich meal is what I have brought for you today. Aloo gobhi paratha is here in a beautiful blue dish, right now making me drool over it. I feel paratha is actually an extended version of chapati where instead of serving a curry or side dish, we stuff it within. It’s kind of easy cooking affair for me. Because reduced cooking time and some relaxation time in between. Which is more and more need of the time for a blogger like me. Though authentically paratha is made of all purpose flour, I always prefer healthy alternative, Whole wheat flour!!
This aloo gobhi paratha has become kids favorite since last week. I had been offered a small cauliflower for FREE by my vegetable vendor last week . Yes, sometimes vegetable vendor becomes too generous like that. And I had no idea of preparing this wonderfulness at that moment. Later as I drove back, the image of paratha was being shaping up in my mind. And that magic came true in my kitchen for lunch, the same day.
The grated cauliflower with all the spices and mashed potato makes a perfect stuffing. In any paratha, it’s the stuffing which is key in determining the taste. So I try to include all those stuff that can take the deliciousness to next level. The ginger, the spices and even coriander leaves put in to the stuffing delivers super fantastic flavors. And I never opt to skip anything..You too don’t miss out !!
