Curry in a hurry!!!
This is what I would like to call this simple, quick rice side dish besan curry. It’s the recipe from my mother who used to whip this up for dinner when she ran out of side dishes and as a quick fix it would rescue her. It’s creamy, mild in spice and crunch of onions add up to the taste. I used to end up licking it clean rather eating with rice. It used to be that good.
It was last week’s sickness that triggered my memory of this besan curry and I made it as secondary curry for lunch. When you are ill physically and nothing seems to be fascinating to cook, then you look for something simple, quick and yet delicious side dishes. It was the same case with me too, this curry hardly took 15 minutes from start to finish and I could actually nap for a while in the afternoon after kitchen time.
The season is changing in UAE which is the phase where we are heading towards very hot tropical phenomenon and at this phase it is very obvious that we fall sick every now and then. The weird weather is vital in making us physical ill and body demands some time to balance itself. Which is happening right now here in most of the households.
So, today I am showing off with this simple besan curry that can come handy to you as well when elaborate cooking is not feasible.
Besan Curry | Gram Flour Curry Recipe
Ingredients
- Chcikpea flour besan- 4 tsp
- Buttermilk- 1/2 cup
- Onion- 1 no.
- Green chillies- 2 no.
- Salt- 1/2 tsp
- Finely chopped ginger- 1/2 tsp
Seasoning ingredients
- Cooking oil- 1 tsp
- Cumin seeds- 1/2 tsp
- Mustard seeds- 1/2 tsp
- Split black gram lentils- 1/2 tsp
- Curry leaves- Few
Instructions
Preparation
- Peel off the onion and chop it finely. Slit green chillies in to two. Mix 1/4 of water to the gram flour and prepare limp-less paste.
Method
- Heat a pan adding all the seasoning ingredients in the order mentioned, as the mustard seeds crackle add chopped onion, green chillies and ginger. Saute till onion turns translucent. Next add 1/2 cup of water and gram flour paste prepared in above step.
- Mix well. As it thickens, add salt and buttermilk too. Let it cook for few minutes till the raw smell disappears completely. Adjust water as per the desired consistency. Switch off once done.
- Easy rice side dish gram flour curry is ready to serve with steamed rice.
Notes
- You can make variations by adding tomatoes and you can also add some turmeric powder for nice color.
- The buttermilk gives nice tangy taste to the curry, do not skip it.
- If you don't have buttermilk, you can whisk some curds and use.
- Always serve it hot for best taste.
