Batata Sukke | Potato Dry Sabji | Konkani Recipes

Potato dry sabji or batata sukke is simplest of all, which can be cooked even during lock-down. Though the COVID-19 has made us locked inside our respective homes, we need food to survive. And with limited groceries and veggies, we, ladies try to feed our family delicious meal every time.  So in this unprecedented lock-down time, I made batata sukke (named in Konkani language) that requires mainly potato and tomato.


For most of us, it’s kind of overwhelmed feeling of fear, anxiety and uncertainty. How long is this “STAY-AT HOME”  thing? Can we ever go out? Can  we get the old world back again? These are the questions and feelings that drag us in different directions.  Having said that, we are actually making the earth to heal with zero pollution. We are staying in as an act of love and making the world safe for every one. So lets move on with a ray of hope.

As cooking gets bit tricky with groceries in stock. right now, this potato dry sabji comes very handy. I loved pairing it with dosa and it was yummy+delicious. Kids loved it much and demanded second serving. So make this at your convenience.

Batata Sukke | Potato Dry Sabji | Konkani Recipes

This is an easy and quick side dish that pairs well with chapati and Dosa both. The flavors of coriander leaves and ginger is too good in this recipe.

Ingredients

  • 4 nos. Potatoes Cooked and chopped in to cubes
  • 2 nos. Tomatoes chopped in to cubes
  • 1 tsp Salt
  • 2 tsp Oil
  • 1 tsp Cumin seeds
  • 1 tsp Mustard seeds
  • few Curry leaves

To grind

  • 1/2 cup Grated coconut
  • 2 nos. Green chillies
  • 2 inch Ginger
  • 1/4 cup Coriander leaves
  • 1/4 tsp Turmeric powder

Instructions

  • In a mixer, add fresh coconut, green chillies, ginger, turmeric powder and coriander leaves. Without adding water, grind them together coarsely.

  • Next, heat a pan with oil, mustard, cumin seeds and curry leaves. Let them splutter. Add chopped tomatoes and saute well for at least 4 minutes.

  • Next, add ground coconut masala and mix very well.

  • Add cooked potato cubes and give a nice mix. Let it cook 2 more minutes and switch off.

  • Very easy and flavorful batata sukke is ready. Pair it with either dosa or chapati. It's the best.

Notes

  • Do not add any water to grind the masala. 
  • This is dry side dish, so no water added while cooking.
  • Ginger, coriander leaves give a nice flavor to it. So do not skip them.
