Veg Cutlet | Vegetable Cutlet Recipe

Veg cutlet, vegetable cutlet is truly a healthy snack as per me. Actually I made it bit more healthier through shallow frying. Isn’t so? This has been one of my favorite snack to order in restaurants if we happen to go there in the evenings. I love the crispy crust that covers the soft veggies which is again loaded with all wonderful spices.

Why do veg cutlet break while frying?


Veg cutlet should hold it’s shape and shouldn’t be fragile. This can happen only when the dough is stiff. We can achieve it with properly cooking the vegetables. Never use water to cook veggies. This is very important step to obtain stiff dough. After cooking, the veggies may release lots of moisture. It should be drained with fine strainer and then mashed to perfection. Also choose potatoes which turn dry not gooey after cooking. These steps help the cutlet to hold shape.

Can we use rava to coat cutlet?

Vegetable cutlet normally has the coating of breadcrumbs to give nice crisp texture. But instead of breadcrumbs, I have used fine rava to coat my veg cutlets. And trust me it worked really well. Rava or sooji sticks to shaped cutlet and forms a thin layer. Which when shallow fried, gives super crisp crust. And the crispy-ness lasts for longer, so I prefer to use rava in place of breadcrumbs.

Veg Cutlet | Vegetable Cutlet Recipe

Very healthy and tasty veg cutlet is apt for evening snack with a cup of tea or coffee. Tomato ketchup and mint chutney are the best accompaniments with this snack.

Ingredients

  • 1/2 cup chopped carrot
  • 1/2 cup chopped beans
  • 1/2 cup chopped beetroot
  • 1/4 cup green peas
  • 1/2 cup potato
  • 1/2 cup breadcrumbs
  • 2 tbsp cornflour
  • 2 tsp chopped green chillies
  • 1 tsp chopped ginger
  • 1 tsp salt
  • 1/2 tsp cumin powder
  • 1 tsp red chilly powder
  • 1/2 tsp garam masala
  • 1/2 tsp aamchur powder
  • 2 tbsp coriander leaves
  • 2 tbsp oil

Instructions

  • Pressure cook all the vegetables like carrot, beans, beetroot, peas and potatoes without adding any water.

  • Drain the water and mash cooked vegetables very well. Add breadcrumbs, cornflour, green chillies and ginger.

  • Next add all the spice powders like red chilly powder, salt, garam masala, aamchur powder, cumin powder and coriander leaves. Mix stiff dough. You can include some more breadcrumbs if needed to get the stiff dough.

  • Now using cutlet cutter, shape the cutlets. Coat each one with fine rava and shallow fry in some oil till they turn golden brown.

Notes

  • You can add the vegetables of your choice like cauliflower and cabbage.
  • Do not add water to cook vegetables. Before mashing, ensure all moisture is drained off.
  • Breadcrumbs binds all veggies together. So do not skip it. If needed, you can add some more of it.
  • You can even deep fry the cutlets in enough oil.
