Healthy way to eat vegetables, greens and lentils in the form stirfry is one popular idea. Of course all vegetables cannot be eaten in raw form except few but I believe every vegetable has it’s own set of nutrients and our body needs them all in one form or the other. Bottle gourd makes it’s appearance not very often at my home, still I buy it every now and then. Today I am posting simple bottle gourd recipe, bottle gourd stirfry that is plain but awesome in taste.
Bottle Gourd Recipe | Bottle Gourd Stirfry | Sorekayi Palya Recipe
Ingredients
- Bottle gourd- 1 small sized
- Green chillies- 2 no.s
- Powdered jaggery- 1 teaspoon
- Salt- 1 teaspoon
- Turmeric powder- 1/4 teaspoon
- Grated coconut- 3 teaspoon
- Cooking oil- 3 teaspoon
- Mustard seeds- 1/2 teaspoon
- Split black gram lentil- 1/2 teaspoon
- Broken red chilly- 1 no.
- Curry leaves- few
Instructions
- Cut bottle gourd vertically in to half and chop in to thin slices as shown in below pictures.
- Heat a pan/Kadai, add all the seasoning ingredients in the order mentioned and let the mustard seeds splutter and split black gram lentil turn little brown then add chopped bottle gourd pieces. Stir well for a while.
- Add salt, jaggery, slit green chillies, turmeric powder and 1/4 cup of water. Cook it covered till the veggies are soft. Keep stirring in between.
- When the bottle gourd pieces are done, add grated coconut and mix well.
- Bottle gourd stirfry is ready now. Serve it as chapati side dish or as a accompaniment with rice-rasam combo.
Note
- The stirfry has mild spiciness, if you want more then add green chillies accordingly.
- Add additional water if the veggies are not cooked with 1/4 of water.
- In the end you can squeeze lemon to give a tangy taste to it.
