In every day cooking, curry plays a vital role. Flavorful, tasty and innovative curries are always welcomed by my family. So I keep an eye on curries that can be whipped up with little tasty twist. Beans curry is one such curry that stands out from my regular curry recipes. Do you remember Malabar spinach curry? That is how my normal curry would be.
Let me tell you frankly, this beans curry is quite different. It has the blend of spices like coriander seeds, cumin seeds, fenugreek seeds and green chillies with fresh coconut. These spices are roasted in medium flame and ground to fine paste. This masala is the key taste provider to curry.
The recipe of this beans curry is applicable to mixed vegetables and greens too. Meaning, if you replace beans and substitute it with mixed vegetables or simply greens, the curry tastes too good. You need to try this to believe.

Beans Curry in Udupi Style
Ingredients
- 1 cup Chopped beans
- 1/4 tsp Turmeric powder
- 2 tsp Salt
- 2 tsp Jaggery
- 1 tbsp Tamarind
- 1.25 cups Cooked lentils
TO ROAST and GRIND
- 2 tsp Coconut oil
- 1 tbsp Coriander seeds
- 1 tsp Cumin seeds
- 1/4 tsp Fenugreek seeds
- 3 no. Green chillies
- 1/4 tsp Asafoetida
- 1/4 cup Coconut
TO TEMPER
- 2 tsp Coconut oil
- 1/2 tsp Mustard seeds
- 1/2 tsp Cumin seeds
Instructions
- In a pan, take 3 cups of chopped beans and some water. Add salt and let it cook.
- Next heat a pan adding oil, coriander seeds, cumin seeds, fenugreek seeds, green chillies and asafoetida. Roast in medium flame for few seconds. Then add coconut and continue roasting. Grind all these ingredients with some water to fine paste.
- Next, add jaggery and tamarind water to veggie. Continue cooking till veggies turn soft. Then, add cooked lentils.
- Add prepared masala too and mix well. Adjust salt and bring it to nice boil.
- Delicious beans curry is ready to serve with hot steamed rice.
