This thing of deliciousness happened in a jiffy. Like, may be in just half an hour. Do you remember cucumber sweet idli that I posted few years back? It needed rice soaked for an hour prior. Which is what I wanted to overcome..I mean SOAKING TIME. So the magic of cucumber rava idli happened right today when something delicious, aromatic and savory was desperately needed. Because it’s WEEKEND guys. I get too excited to cook something interesting on weekends sometimes. It is just one such weekend.
Currently I call this cucumber rava idli as STAR of breakfasts where I just have to spare 30 minutes from start to end. On top of that since it’s rava/semolina which is replacing rice from it’s counterpart traditional recipe, the idli never turns sticky. So guess what! Completely non sticky, cucumber aroma overflowing, mildly spicy, amazing idli on your plate.
I would insist you guys! You need to try this foolproof recipe at least once. You can serve this cucumber rava idli with plain ghee or with spicy coconut chutney. Both taste equally yummy. My recommendations for side dish would be something spicy chutney or sambar or curry. Those of you who don’t like spicy combo, then try ghee.

Ingredients
- Medium rava(semolina) - 1 cup
- Tender cucumber medium sized - 1 or 1 cup finely chopped
- Grated coconut- 1/2 cup
- Green chillies- 1 no.
- Cumin seeds- 1 tsp
- Salt- 1 tsp

Method
- Take rava in pan and in medium flame with constant stirring roast it for few minutes. Transfer it to a bowl and let it cool down.
- Next add grated coconut, green chilly and cumin in to a mixer jar. Make a fine paste adding required water.
- Trim the edges of cucumber and chop it very finely. You can even grate it. Add cucumber and ground coconut paste to rava.
- Add salt to it and mix everything well. Then add 1/2 cup of water to the bowl and mix such that everything comes together like loose dough.
- Ensure it doesn't turn too watery or stiff. Consistency is somewhere between dough and batter. Cut the banana leaf in to small pieces and take a limp of dough.
- Spread the dough over banana leaf, fold the ends together and steam it in idli steamer.
- Continue this process with rest of the dough. Steam it for 10-15 minutes or till done.
- Aromatic and tasty cucumber rava idli is ready to serve with spicy coconut chutney.
Notes
- Roasting rava for few minutes is important because you get non-sticky idli. So do not skip the step.
- If the cucumber is matured, remove the seeds before chopping. You can even grate it. But I like to bite chunks, so chopped it.
- If you don't have banana leaf, you can steam it like normal idli in normal idli steamer.
