Puffed Rice Upma | North Karnataka Special

An evening treat from North Karnataka => Puffed rice upma. Northern part of Karnataka and people from this region have strong bond with puffed rice.  And they turn these light puffed rice to exceptionally good delicacies. Since I was a resident of that part of Karnataka for more than 10 years, I adore the treats, delicacies that are basically authentic to the place.(Remember spicy puffed rice?) In my schooling days I have had enough opportunity to relish puffed rice and it’s various goodies.


Basically puffed rice upma is very simple, straight forward recipe. Like, quick to whip up and makes tummy full. Though this authentic North Karnataka food isn’t common at my home as my mother never made, my friends ensured that I taste them, relish them. And now, I keep in touch with those friends in order to get the authentic recipes. So my bond with childhood friends has extended up to recipes now! Because I am food blogger you know? Makes sense right.

The cooking process of puffed rice upma begins with powdering roasted gram. And then soaking the puffed rice for a minute. Since puffed rice has the tendency to be mushy, you have to soak it till it softens not mushy! So ensure this is taken care.

Tempering is all similar to any other upma and you can even add some cooked veggies too. Because veggies contribute to health factor.  Serving puffed rice upma topped with nylon sev is all crunchy good to snack on.

Ingredients

  • Puffed rice- 4 cups
  • Roasted gram- 1/8 cup
  • Onion- 1 no.
  • Green chillies- 2 nos.
  • Peanuts- 1 tbsp
  • Coriander leaves- Handful
  • Salt- 1 tsp
  • Turmeric powder- 1/2 tsp
  • Lemon- Half

To temper

  • Cooking oil- 1.5 tbsp
  • Mustard seeds- 1/2 tsp
  • Split blackgram lentils- 1/2 tsp
  • Curry leaves- Few

Instructions

Preparation

  • Take roasted gram in a mixer and powder it finely. Next peel off onion and finely chop it along with coriander leaves. Slit the green chillies and keep aside till use.

Method

  • Immerse puffed rice in enough water for about a minute. Squeeze completely and keep it aside.
  • Next heat a pan adding oil, mustard seeds, lentils and curry leaves. Let the mustard splutter. Include peanuts, chopped onions and green chillies. Saute till the onions turn translucent.
  • Next add turmeric powder, salt and squeezed puffed rice. Give a quick mix. Finally add roasted gram powder, coriander leaves, squeeze in lemon juice and mix.
  • Delicious puffed rice upma is ready to serve as evening snack.

Notes

  • Do not soak puffed rice for long, it will become mushy.
  • This is simple snack, you can even add few veggies like carrot, peas to make it more healthier.
  • You can garnish it with plain sev before serving.
