Coming up with a quick post in the mid of weekend and it is this healthy carrot kosambari. Because it’s again that time of the year when we crave for cool panakam and lentil salad. Yes, it’s Rama Navami tomorrow. As the sun and sweat step in to our lives after the cozy winter season, the summer festivals follow them. And such festivals give us wonderful scope of making food appropriate to the season. Which is what I really love about these super festivals. The cool cool salads, buttermilk and panaka make this RAMA NAVAMI festival a food for soul kind of feeling.
This year all the super women out there are in comfort zone because it’s Sunday tomorrow and festival happens on the holiday itself. So, with no office chores in mind you can happily and peacefully celebrate this super day. The food heroes of the day carrot kosambari and jaggery panaka would definitely make your day.

Carrot Kosambari Recipe | Rama Navami Special
Ingredients
- Carrot- 2 nos.
- Split yellow lentils- 1/8 cup
- Fresh grated coconut- 1/4 cup
- Coriander leaves- handful
- Curry leaves- Few
- Ginger- 1" piece
- Salt- 1/2 tsp
- Lemon- half

Preparation
- Rinse the yellow lentils using enough water and soak it for around half an hour.
Method
- After soaking the lentils would have turned soft. Drain the water and keep aside. Wash and grate the carrot using a fine grater.
- Finely chop coriander leaves, curry leaves and ginger. In a wide bowl add grated carrot, lentils, coriander, curry leaves, ginger, salt. Give a nice mix. Finally squeeze lemon juice and stir.
- Healthy carrot lentil salad is ready to serve on the occasion of Rama Navami.
Notes
- Adding salt just before serving is best practice. Otherwise it will ooze out water.
- You can include finely chopped green chillies too. I haven't added as kids don't chilly spice.
- You can replace yellow lentils by split chickpeas also.
- Grated raw mango can replace lemon juice, which tastes even better.
