Beautiful food creation of my life happened at my kitchen in the form of instant shavige this week. Having these instant version of homemade noodles as breakfast and snack for 3 days in a row wasn’t monotonous. Because shavige is yummy and delicious just like that. Traditional ottu shavige demands insane amount of work in the kitchen, besides it also needs you to master the recipe. But don’t get disappointed my friends. I am here to ease your work in the kitchen and to bring smile on your face between the hustle and bustle of your life.
Instant version of breakfast always come handy between the morning chores which is why I hunt for such recipes. Instant shavige using rice flour has that same intention. You don’t even need to soak in rice for hours here. Don’t bother cooking the batter for long to get it in to dough consistency. The rice flour and water quantity is important for this instant shavige recipe as it decides the outcome. I have used 3/4 cup of water which was perfect for the soft, non-sticky shavige. In case you use more water the rice flour dough becomes extremely soft and shavige would be sticky and mushy. Not a perfect shavige situation, isn’t it? In other case, if you use less water, the dough turns hard making the shavige non-sticky but rock-hard. This even doesn’t sound perfect, right?
So, bottom line is the rice flour and water combined dough should be moist, soft and just right. It gives the ultimate, mind blowing shavige (rice noodles) that you always dream for.
Instant Rice Noodles | Rice Flour Ottu Shavige
Ingredients
- Rice flour- 1 cup
- Water- 3/4 cup
- Salt- 1 tsp
- Oil- 3 tsp
Instructions
Method
- Sieve the rice flour and keep it ready. Heat a pan adding water and salt. Let it come to rolling boil.
- Add oil to the water and as it starts boiling add rice flour.
- Let the rice flour cook for few minutes without stirring. Then stir together, so that rice flour comes to dough form. Cook it for some more time. Once done, transfer it over a plate. When your hands can bear the heat of dough, knead it well. Ensure there are no lumps.
- Divide the dough in to 5 balls of cylindrical shape. Arrange them over a idli stand or steamer and steam cook it for about 15 minutes.
- If you insert a toothpick in to such dough ball, it should come out clean. If so, the dough balls are perfectly cooked. Fill the shavige press with the cooked rice flour dough.
- Press it over a plate like a concentric circle. Repeat this process with rest of the dough.
- Instant rice noodle or instant rice flour ottu shavige is ready to serve with chutney, curry or sweetened coconut milk.
Notes
- The rice flour should be cooked to non sticky dough. Do not use more water than recommended.
- The dough shouldn't be extremely soft or hard, it should just be soft and perfect.
- When kneading the dough, if you feel it is dry sprinkle some water. If it is overly soft, use some more flour.
- It is important to knead the dough when it is still warm.
- The shavige press should be filled with dough that is hot or warm at least. If you let it to cool down then pressing in to shavige would be impossible.
