Food for winter also includes some deep fried goodies and snacks to keep our longings at ease. In light of such food cravings I happened to make this crispy deliciousness green lentil nippattu today.
Unlike the authentic nippattu recipe which uses peanuts, this green lentil nippattu has lentils. Every bite of nippattu tastes lentil-crunchy, spicy and flavorful which the weather demands. An important trick while making this green lentil nippattu is adding warm oil to the flour. Warm oil forms crumbles of flour and it helps in keeping the goodies crisp. Also it is advisable to knead the dough very stiff with minimum amount of water otherwise lots of oil gets consumed. Green Lentil Nippattu | Hesarubele Nippattu Recipe
Ingredients
- Rice flour- 1 cup
- Chiroti rava- 1/2 cup
- Green gram lentils- 1/8 cup
- Maida- 2 tsp
- White sesame seeds- 2 tsp
- Cumin seeds- 1 tsp
- Salt- 1 tsp
- Cooking oil- enough to deep fry
To grind
- Desiccated coconut- 1/4 cup
- Red chillies- 3 nos.
- Asafoetida- 1/4 tsp
- Curry leaves- Few
Instructions
Preparation
- Soak the green gram lentils in enough water for about 15 minutes.
Method
- In a wide bowl take the rice flour, rava, maida, salt, cumin and white sesame seeds. Give a quick mix.
- In a mixer add desiccated coconut, red chillies, curry leaves and asafoetida. Grind them together to coarse powder.
- Include drained lentils and ground red chilly masala from above step. Mix well.
- Add 1/4 cup hot oil to the bowl and combine it so that flour crumbles. Next adding water little by little, make stiff dough. Taking a big lump of dough and roll it over as thin circle and using any lid mark circles over dough.
- Heat oil in a heavy bottom wok, when it heats up drop the nippattu in it. Fry till they are crisp and drain over the tissue. Repeat this for all the rolled nippattu.
- Crispy nippattu is ready to serve as tea time snack.
Notes
- Adding hot oil initially to the flour helps in making the nippattu crisp. After this, add water little by little to knead the dough.
- The dough should be stiff otherwise the nippattu could drink lot of oil.
