Breadfruit, a common vegetable in Udupi-Mangalore households can be a best substitute of potato. Though breadfruit has gummy texture when raw, it just melts in mouth when cooked. A big breadfruit tree in the backyard of my parents’ house has a large number of gorgeous green colored breadfruits hanging at the reach of our hands. These tender vegetables have been eyed by each and every one passing by the road. I am eagerly waiting for them to grow and get lovingly cooked in to stir fry or breadfruit bajji or breadfruit dosa or breadfruit curry.
A very simple and quick rice side dish breadfruit curry cooked lovingly by my mother had vibrant color and melt in mouth taste. I just went on eating these well cooked slices of breadfruit one after the other which had absorbed all spice and salt. The only daunting task in breadfruit curry preparation is peeling, slicing and removing fibrous part from it. Once done it just takes few minutes to cook them. YES..breadfruit needs little time to be soft, if you overcook them the slices will be mushy and the breadfruit curry loses the taste and texture. Read on the recipe…..
