Half inch rectangular cubes of potato blended with the flavor of garam masala and ginger garlic paste, balanced with all tastes like tangy tomato and sweet jaggery briefs you about this potato gravy which is one of the frequent side dish for chapati at my home. Chapati makes it’s appearance once or twice a week as a breakfast dish, always my objective would be to make variations and try a potato side dish tasting differently than usual. Such an attempt of renewing chapati side dish ended up with this potato gravy recipe and I have hooked on to this since a year or two.
This recipe is not a traditional one but tested many times and end product is just perfect. Wrapping up this behind story of dish, let us see the recipe now.
Potato Gravy Recipe | Chapati Side Dish
Ingredients
- Potatoes- 3 to 4 medium sized
- Tomato- 1 no.
- Onion- 2 no.
- Garlic- 4 pods
- Ginger- 1" piece
- Green chillies- 2 no.
- Salt- 1 tsp or to taste
- Turmeric powder- 1/4 tsp
- Jaggery- 1 tsp optional
- Garam masala powder- 1 tsp
- Coriander leaves- Fistful
Seasoning ingredients
- Cooking oil- 3 tsp
- Mustard seeds- 1/2 tsp
- Split black gram lemtil- 1/2 tsp
- Bengal gram lentil- 1/2 tsp
- Curry leaves- few
Instructions
Preparation
- Peel potatoes and chop them in to 1/2 inch pieces. Immerse chopped potatoes in a cup of water and pressure cook till the pieces are soft.
- Finely chop tomatoes, onion and coriander leaves. Make paste of ginger and garlic using mixer or mortar and pestle. Keep them aside.
Method
- Add all the seasoning ingredients in to a pan in the order mentioned, when mustard seeds splutter add chopped onions. Saute till onions turn translucent.
- Now add tomatoes and saute till tomatoes are mushy. Add ginger garlic paste, slit green chillies, jaggery and turmeric powder. Stir till all the spices blend with onion.
- Now add cooked potatoes along with water, salt and garam masala powder. Saute well. Cook it for few more minutes and switch off. Garnish with coriander leaves.
- Potato gravy is ready to be served as side dish for chapathi or poori.
Note
- Add additional water to the gravy as per your preferred consistency.
- Jaggery is optional, but I like right balance of all tastes in any dish. So I have added.
