Elephant yam, a tuber veggie is very nutritious and palatable as it draws the essence of soil. You can find two to three varieties of stirfry/palyas in most of the udupi feasts out of which one will be elephant yam stirfry. Stirfry/palya can be prepared using coconut with mustard seeds masala and/or coconut with cumin seeds masala or as plain. These stirfries form a good accompaniment/side dish with rice/rasam combo. My family loves these palyas and it is one way to make children eat vegetables. Let’s see the recipe.
