Wow…Diwali/Deepavali 2013 is fast approaching…It’s time for ladies to get ready with variety of diwali sweets and snacks, kids to burst crackers and gentle men to empty their wallet on fireworks and gifts. Carrot halwa/gajar ka halwa is one of the easiest sweet recipe which any one can try and hardly no one makes mistakes with it. Of course you need to go through a perfect carrot halwa recipe for no mess…:). In Udupi Sri Krishna Math carrot is considered as foreign vegetable and not at all used in it’s cuisine. But in all the other ceremonies and hotels you will definitely find this sweet. The carrot halwa recipe I have shared here needs no milk, so you can preserve it for two days without refrigeration. Let me brief you the recipe.
Easy Diwali Sweets Recipe- Carrot Halwa Recipe/Gajar Ka Halwa Recipe
Ingredients
- Fresh carrots- 4 big sized
- Sugar- 1 cup
- Ghee- 1/4 cup
- Cardamom pods- 4 nos.
- Cashews- few
- Raisins- few

Preparation
- Wash, peel and grate carrots. Measure the grated carrots in cup. Grated carrot and sugar ratio should be 1:1/2. After grating 4 carrots I got tightly packed 2 cup of grated carrot. So I used 1 cup of sugar.
- De-seed cardamom and make fine powder out of it. Keep it aside.
Method
- Pressure cook grated carrot for 3 whistles. Do not add water or milk to carrot while pressure cooking. Just add grated carrot in a vessel and keep the vessel closed in pressure cooker.
- Heat a pan/kadai adding 2 teaspoon of ghee and dry fruits like raisin and cashews. Fry them till cashew turns little brown. Remove and keep them aside.
- In the same pan add pressure cooked grated carrot and sugar. Keep stirring in low flame. Sugar melts immediately and the content becomes watery. continue stirring until the carrot absorbs all the sugar and mixture becomes thick as shown below.
- Now add ghee and again continue stirring for about 5 minutes. The mixture now becomes thick absorbing all the ghee. This is when you need to add cardamom powder and ghee fried cashews/raisins. Switch off the flame.
- Carrot halwa/gajar ka halwa is ready to serve. Try this easy recipe and let me know about your end product :).
Note:
- You can use pistachios and almonds too to garnish the carrot halwa.
- I highly recommend above mentioned sugar and grated carrot ratio. The sweetness is not too less/more. It is just perfect.
