Lady’s finger fry is a crispy, crunchy tea time snack and can be prepared in a jiffy. I just prepared these fries yesterday without any pre planning. Thought of the snack at 4 o’clock and and it was ready by 5 o’clock along with photographs. When we all finished having tea, bowl of ladies finger fries too was empty. This is also known as “bende kayi gatti baje” in Tulu. Let me brief you about the recipe.
Ladies finger Fry/Ladies finger Pakoda Recipe
Servings: 30 to 40
Ingredients
- Lady's finger/Bende kayi- 20 nos.
- Bengal gram flour/Besan- 3/4 cup
- Rice flour- 2 teaspoon
- Red chilli powder- 1 teaspoon
- Salt- 3/4 teaspoon
- Asafoetida- Chick pea size.
- Ajwain seeds- A pinch
- Oil for deep fry

Preparation
- Wash and wipe the lady's fingers till dry. Cut them in to medium size pieces as shown below.
Method
- In a mixing bowl add bengal gram flour, rice flour, red chilli powder, salt, crushed ajwain and diluted asafoetida. Mix well.
- Now add lady's finger pieces to the same bowl, sprinkle little water and mix together. The ladies finger pieces get coated with the flour.
- Heat oil in a kadai/frying pan and fry the coated ladies finger pieces in batches. Fry them in medium flame till they turn little brown and become crispy. Drain them on tissue paper.
- Lady's finger fries/ladies finger pakoda is ready. Serve hot with tea or coffee in the evening.
Note:
- You can add a pinch of baking soda for more crispiness. I did not add.
- Lady's finger pakodas to be fried in low to medium flame only otherwise pieces will not get fried properly.
