Broken Wheat Payasam | Broken Wheat Kheer | Godi Kadi Payasa

            The simplest and one of my favorite payasam recipe I am going to post today. When it comes to dessert/payasa, I most often prepare this one.  Broken wheat is very healthy and also any dish prepared using broken wheat is good for diabetic patient too. In Udupi most desserts are prepared using coconut milk instead of regular milk. Payasam is one of the mandatory dish in all feasts of this region. Let us see the broken wheat payasam recipe today.

Ingredients

  • Broken wheat- 1 cup
  • Fresh coconut - 1/2
  • Jaggery- 1 cup
  • Cardamom- 3 nos
  • Cashew nuts- 10 nos
  • Raisins- 10 nos
  • Almond- 10 nos
  • Ghee- 2 tsp

Instructions

Preparation

  • Wash the broken wheat and pressure cook it with one cup of water.
  • Cut the almonds in to pieces.

Method

  • Grate the coconut and grind it along with 3 cardamom adding half cup of water. Once it is ground finely, pour it on to a strainer and squeeze first extract coconut milk.
  • Transfer the squeezed coconut again to mixer and grind finely adding 1 cup of water. Pour this on to strainer and squeeze second extract milk.
  • Heat a heavy bottom vessel adding jaggery and one cup water. Once the jaggery dissolves and starts boiling add cooked broken wheat. Let it cook for 5 to 10 minutes in simmer. Keep stirring at regular intervals.
  • Now add second extract coconut milk and bring it to boil.
  • Mean while heat a seasoning pan, add 2 tea spoon of ghee and fry cashew nuts, almonds and raisins one by one. Cashew and almond get slightly brown color and raisins puff up when fried.
  • Now add the thick extract coconut milk and as it boils switch off the flame.
  • Add fried dry fruits to the broken wheat payasam and mix well.
  • Yammy broken wheat kheer is ready to serve.

Note:

  • Instead of adding cardamom while grinding coconut, cardamom powder can be added at the end.
  • Broken wheat payasam thickens with time, add some hot water to get the right consistency.
