Lemon sevai, is going to be a staple breakfast during this Navaratri. I guess so. Because pretty much simple yet amazingly delicious food can never be sidelined. They have to be devoured with much honor and dignity. This holds true for lemon semiya according to me. Some times I never go beyond my routine breakfast of dosa and chapati and I keep tweaking the same. And randomly when I thought to make sevai, it tastes way too delicious. Like the way it happened today.
Sevai or shavige making is quite elaborated process. If ottu shavige is to be prepared in Udupi style, then it comes with tedious tasks. So I keep those stuff during weekends. On weekdays big No, No to it. But trust me, this lemon sevai can be whipped up in just 30 minutes. Like any other easy breakfast, it doesn’t need much of your time.
So instant lemon sevai is prepared using rava shavige. No soaking and grinding business to make rava shavige. Which is why it is my go-to recipe of breakfast and evening snack. After trying yourself, you would surely agree with me. Isn’t it?

Notes
- This recipe needs fine rava which known as chiroti rava or bombay rava. Do not use coarse one.
- Since we add enough salt to sevai itself, it doesn't need much of it while seasoning. So adjust according to your taste.
