We are meeting through this space during the lock-down period for second time. I and you are spending the days with mixed emotions now. Though the question “How long?” is ringing in everyone’s mind, nobody can predict the future. But hope is what bound us all together. So there is surely an END to this lock-down some day or the other. Today’s recipe instant medu vada is most convenient and apt for this season I must say.
If you have not soaked the lentils for making the actual, real Medu vada, but your cravings for a deep fried snack is irresistible, then instant medu vada is the solution. With bare minimum ingredients and time, you can whip up a real crisp medu vada. It’s scrumptious, crisp outside and soft inside just like the REAL one. So must try recipe and best companion with coffee /tea. What say?

Instant Medu Vada | Instant Vada Recipe
Ingredients
- 1/2 cup Rice flour
- 1/2 cup Yogurt
- 1/2 cup Water
- 1/2 tsp Salt
- 1 tbsp Ginger grated
- 2 tsp Green chillies
- 1 tbsp Curry leaves
- 2 tbsp Coriander leaves
Instructions
- In a bowl take yogurt and water. Whisk them together well.
- Next add rice flour and make lump-less batter. Next add grated ginger, chopped green chillies, curry leaves and salt.
- Mix them together and transfer to cooking pan. With constant stirring, cook it in medium flame. It thickens and comes together.
- Add chopped coriander leaves and mix well. When dough is thick enough to make ball, switch off flame and transfer to a plate.
- Next shape the medu vada and drop in to hot oil one by one. Deep fry till golden brown and relish with tea/coffee.
- Crispy instant medu vada is ready to serve.
Notes
- When you cook the batter, keep stirring otherwise it sticks to the pan.
- When the batter gets to the consistency of dough, switch off the flame.
- You can add crushed black pepper for enhanced taste.
