Which is the summer season’s best fruit? Obviously mango. But for me it’s Jackfruit too. A gigantic fruit which is so very difficult to handle either to cook or to eat is also an amazing summer fruit. When this season rolls on, jackfruit happens to find its place in cooking and papad making. Season’s first fruit brings in a new vibe and energy among us which is why we look at jackfruit trees and count the fruits that it bears. Halasina kayi palya is one of the traditional recipes which uses jackfruit in it’s tender form.
Jackfruit is known as “halasu” in Kannada language. When it is tender and raw, we can use it like a vegetable. Though the recipes taste amazingly delicious, handling the veggie is quite tedious. The sticky gum which is abundant in jackfruit makes peeling and chopping a tiresome work. One may reluctant to cook the veggie just because it is difficult to handle, which happens with me too at times :).
Do you remember raw jackfruit curry which showed up here couple of weeks ago? I had many requests from my readers for this awesomeness, halasina kayi palya. Thankfully, I could obtain a perfect, raw, cooking kind of jackfruit from India. And ahead of my plans, I could whip this stir fry at my home. The tiny shreds of raw jackfruit with the flavors of mustard seeds and red chillies, taste amazing. The stir fry at it’s best.
The summer vibes, the authentic Udupi feeling is what I felt as I was cooking it. Wherever you are located in this world, the authentic recipes bring the local flavors around you. Believe it or not, it’s true for me.

Halasina Kayi Palya | Raw Jackfruit Palya Recipe
Ingredients
- Raw jackfruit small- 1 no.
- Turmeric powder- 1/4 tsp
- Salt- 2 tsp
- Jaggery powder - 1.5 tsp
- Tamarind - Marble sized
- Fresh coconut - 1/2 cup
- Mustard seeds - 1 tsp
- Red chillies- 3 nos.
To temper
- Coconut oil - 3 tsp
- Mustard seeds - 1/2 tsp
- Split black gram lentils - 1/2 tsp
- Curry leaves - Few
Instructions
Preparation
- Apply enough oil to the palms and peel the thorny skin from raw jackfruit. Cut in to half horizontally.
- Using a sharp knife, chop the jackfruit in to small shreds. I have used up 2.5 cups of shredded raw jackfruit in this recipe.
- Heat coconut oil in a pan, add mustard seeds, lentils and curry leaves. Let them splutter, then include shreds of raw jackfruit. Add turmeric powder and some water. Stir well.
- Cover it with lid and cook for about 10 minutes or until the veggie is soft. Include salt, jaggery and tamarind water. Continue cooking for few more minutes.
- Next add coconut, mustard seeds and red chillies to the mixer. Grind them together to coarse paste. Add this to cooked veggie in the pan. Mix well and cook for few seconds. Switch it off once done.
- Very unique and delicious halasina kayi palya (raw jackfruit stir fry) is ready to serve with rice-rasam.
Notes
- Choose the jackfruit that is raw and tender.
- The jackfruit should be chopped in to small, bite sized shreds.
- The coconut plus mustard seeds masala should be coarsely ground. Do not add water while grinding.
- Adjust the spice and salt as per your taste buds.
