It’s a hot summer day with SUN showing no mercy on you and when you open the refrigerator to find these pretty, overwhelmingly tasty mango popsicles, the sweat and heat is half gone. Am I right?? My princess daughter was extremely happy to devour the first time ever home made popsicle as after school snack. Right now as I type, my mind is lingering around the variations and innovations that I can make in this summer coolant popsicle.
This was my first experience with popsicle mould, so I was skeptical as whether mango popsicle comes out clean while de-moulding. The result is quite convincing, so more recipes to come in this category.
I had heard lot about sabja seeds like they are very good body coolants, so thought it would go well in the mango popsicle and look pretty in pictures too. Basically sabja seeds are bland in taste and only half tea spoon has been used up in this recipe which you can see popping out in popsicle. If you don’t stock these seeds, then you can straight away skip it.
Mango Popsicle Recipe | Summer Recipes
Ingredients
- Ripe and sweet mangoes- 2 nos.
- Sugar- 2 tsp
- Subja seeds- 1/2 tsp optional
Instructions
Method
- Peel off the mangoes and chop it in to cubes. Take these mango cubes in a mixer along with sugar and grind to fine puree. Add water to get thin water like consistency. If you are using subja seeds, soak them in some water for few minutes.
- Transfer the mango puree in to a container and combine it with transparent subja seeds which are in water. Pour this mango juice in to popsicle mould and freeze it for at least 6 to 8 hours. Once the popsicles are frozen and ready, show the popsicle mould under running tap water and set aside undisturbed for 2 minutes.
- Demould the popsicle and relish as a summer cooler.
Notes
- If you don't have popsicle mould, try using paper cups which can be torn easily for de-moulding.
- Adjust sugar as per the sweetness of mango.
- You can freeze the popsicles overnight but 5 to 6 hours freezing is enough.
- Subja seeds give nice contrast in the photo, so I have added. You can skip it.
