Indulged in creamy, velvety and rich tasting visual delight i.e carrot kheer right now. After devouring a moderate (not filling), simple South Indian meal, this peach colored carrot kheer is amazingly awesome. It’s a kind of super nutritious dessert with carrot and almonds but the little sugar involved in it hold me back from declaring as REAL SUPER food.
Such half-way healthy dessert always rescue me at times when my kids demand for snacks at random hours. Kids are kids, who demand for snacks or edibles as ongoing basis. So I do cook and keep some desserts like dry fruits laddu or some lentil salads or it can be a soup too. It’s my motherly perspective of feeding kids with food that are healthy plus delicious. Carrot kheer fits in here offering nutrients plus sweet taste both to my sweet heart kids.
Carrot is basically peeled and sliced and then cooked to tender along with almonds plus water. It can take few minutes to be soft on stove top but I relaxed pressure cooking them. The cooked ingredients then travel to mixer grinder to get pureed. This carrot-almond puree has to be sauteed till the raw smell of carrot vanishes. Then combine milk, sugar and cardamom powder and let it boil in simmer. Carrot kheer appealing to the eyes and incredibly tasty to your mouth is ready in half an hour.
Carrot Kheer Recipe
Ingredients
- Carrot- 3 nos.
- Almonds- 10 to 12 nos.
- Boiled milk- 2.5 cups
- Sugar- 1/4 cup
- Cardamom- 2 to 3 or 1 tsp if if powdered

Method
- Wash and peel the skin off from carrots and slice them horizontally in to circular pieces. Put the carrot slices in a cooking vessel along with almonds. Immerse the slices in water.
- Cook them together till they turn soft and tender.You can pressure cook too.
- Blend the cooked carrot slices plus almonds in to fine puree using a mixer. Heat a wok or cooking pan and transfer the carrot puree in to it. Saute this puree in simmer till the raw smell of carrot reduces. At this stage include milk, sugar and cardamom powder. Let the mixture boil for 2 minutes. Then switch off.
- Rich and nutritious carrot kheer is ready. Serve it warm as a dessert.
Notes
- I prepared the kheer of spooning consistency, little thicker than normal payasa. If you prefer you can add additional milk.
- The almonds enhance the taste and make it rich. So I recommend not to skip it.
- I have pressure cooked the carrots for 3 whistles and in simmer for 5 minutes. You either use pressure cooker or open pan to cook.
