Although use of fresh fruits in cooking is very common in our culinary practice, I love to have fruits as is. But salads and juices are exceptions to this. All kind of salads using vegetables alone or mixed with fruits or lentil salad are my favorites. Every other day I do prepare salad as part of main meal and my kids just love it. They end up eating it as a main meal, that is the reason I try making the salad protein rich, wholesome and power packed. Sprouted moong salad is one such nutritious and healthy option.
I do not use store bought sprouted moong rather I prefer sprouting green gram at home which ensures quality and freshness. You need to soak green gram adding enough water for about 4 to 8 hours or overnight. Drain the green gram completely and transfer it in to a plastic bowl covering it with lid. You can find them sprouted in a day. Such fresh sprouted moong are best suited for salad. I like only lemon and salt dressing in to my sprouted moong salad as this is kids favorite and they are not fond of spice. The recipe is just here.
Sprouted Moong Salad with Carrot and Pomegranate
Ingredients
- Grated carrot- 1 cup
- Sprouted moong green gram- 3/4 cup
- Pomegranate seeds- 1 cup
- Grated coconut- 1/2 cup
- Coriander leaves- Handful
- Lemon - 1/2
- salt- 3/4 tsp
Instructions
Method
- Add carrot, pomegranate, grated coconut, sprouted moong and coriander leaves in to a large bowl.
- Toss them gently with your hands or using a large spoon.
- Add salt, squeeze lemon and then mix well.
- Sprouted moong salad is ready. Enjoy protein packed, refreshing and digestive salad.
Note:
- Add very finely chopped green chilly or pepper powder if you like some spicy salad. I like the plain version itself.
- For enhanced flavor you can add seasoning to salad.
