This side dish for rice is very very easy to prepare and palatable too. If you have some fresh yoghurt and lady’s fingers lying in fridge, then you can definitely attempt for this side dish. Yoghurt based side dishes are so comforting, without much spiciness in them. So I insist my kids also to taste such side dishes. Nothing much cooking involved in this Bhindi raita except seasoning and caramelizing lady’s fingers. Hope you would like it.

Ingredients
- Fresh tender lady's fingers- 8 to 10 no.s
- Yoghurt- 1 small bowl shown in picture
- Salt- 1 teaspoon
- Green chilly- 1 no.
- Cooking oil/coconut oil- 4 tea spoon
Seasoning ingredients
- Cooking oil- 2 tea spoon
- Mustard seeds- 1/2 tea spoon
- Split black gram- 1/2 tea spoon
- Red chilly- 1 no.
- Curry leaves- few
Instructions
Preparation
- Wash and pat dry the lady's fingers. Remove head and tail, then slice them in to circular pieces as shown in pictures below.
Method
- Heat a pan/kadai adding 3 teaspoon of coconut oil and sliced lady's fingers. Fry them till they are caramelized. Switch off and transfer them to a vessel.
- Mean while whisk the yoghurt adding some water as per the consistency needed for bhindi raita.
- Heat a seasoning pan adding all the ingredients listed under "seasoning ingredients" and slit green chilly, when the mustard seeds splutter and split black gram turns little brown add the seasoning to whisked yoghurt. Add salt as well and mix it.
- Just before serving bhindi raita, add the caramelized lady finger slices.
