I was thinking about easy sweets recipes for this Diwali that needs no prior preparations. Suddenly ladoo caught my mind….It’s so long that I posted a laddu recipe in this space, so I thought an easy and healthy laddu recipe that is green gram laddo. Yes…green is healthy right? When it comes to healthy food we always understand that it is green vegetables, fruits, low fat and  low calorie edibles. Today let us learn green gram ladoo with green gram and sugar as main ingredients. Alternatively we can make the same laddo substituting sugar by jaggery which I will post in coming days. Here we go with recipe…

Ingredients

  • Green gram - 1 cup
  • Sugar- 1/2 cup
  • Ghee- 1/2 cup
  • Cashews- few
  • Cardamoms- 3 to 4

Instructions

Method

  • Add green grams in a skillet and roast them on low flame till they change in color. Green gram changes it's color to brown and pleasant aroma spreads all over. That is when you need to switch off the flame.
  • Transfer it to another container and let it cool.
  • Add roasted green grams in to mixer and griund it semi coarsely. Sieve it well to discard any large particles.
  • Now in the same mixer add sugar and peeled cardamoms. Grind them together finely.
  • Now break cashews in to small pieces and fry them in little ghee. Remove them from ghee and keep it aside.
  • Now heat the same pan adding all the ghee. Let it warm up, then switch off the flame.
  • In a large bowl add sieved green gram powder, sugar and fried cashews. Mix well with spatula. This is our green gram laddo mix. Add warm ghee little by little and when it is still warm make balls out of laddo mix.
  • Green gram laddo/laddu is ready to be served. It just melts in your mouth, so do try these tempting ladoos and let me know...

Note:

  • If you are making these ladoos in large quantity, do not add all the ghee at once to the ladoo mix, add little by little and tie laddus. This way you can control amount of ghee, but do not reduce ghee completely which yields very dry looking ladoos.
  • Other dry fruits can also be added to the green gram ladoo.
Meet you all with one more interesting Udupi recipe. Till then bye.
