Today is “yugadi” for all Udupi/Mangalore Brahmins. As Solar calender is followed in Udupi/Mangalore region, Yugadi/Vishu/Ugadi which makes the beginning of new year falls on 14th of April. The most important event in Vishu is the Vishukkani, which literally means “the first thing seen on the day of Vishu after waking up”. The Vishukkani consists of a ritual arrangement of auspicious articles like raw rice, mangalore southe, betel leaves, arecanut, metal mirror, flowers, golden jewellery and panchanga. This is arranged the night before Vishu. On Vishu, the custom is to wake up at dawn and go to the puja room with eyes closed so that the Vishukkani is the first sight in the new season. Panchanga shravana is part of the pooja that day. It is nothing but listening to new year calender which forecasts rain, crop, storm and prices. Moong dal payasam, kosambari are the special dishes prepared that day for lunch. Today let me share this hesaru bele(moong dal) payasa recipe with you.

Ingredients
- Yellow lentils moong dal - 1/2 cup
- Jaggery - 1/2 cup
- Fresh coconut - 1 cup
- Cashews- 2 tbsp
- Raisins - 2 tbsp
- Cardamom powder - 1/2 tsp
- Ghee - 2 tsp
Instructions
Method
- Take yellow lentils in a pan and roast for few seconds. Let them warm up. Transfer to a bowl and rinse with enough water.
- Next, drain all the water and transfer the lentils to a vessel. Add 2 cups of water and cook till soft.
- Take coconut in to a mixer, add water and grind to fine puree. Pour over strainder and extract coconut milk.
- Add squeezed coconut again in to mixer and grind along with 1/2 cup of water in to fine puree. Strain the 2nd extracted coconut milk.
- Coconut milk is ready. Now add second extracted coconut milk to cooked lentils. Continue cooking for few seconds.
- Next include jaggery and let it dissolve completely. Finally add first extracted coconut milk, cardamom powder and bring it to boil.
- Roast the cashews, raisins and garnish the payasam.
Notes
- Ensure the lentils aren't burnt while roasted.
- Cook the lentils with constant stirring, otherwise it burns at bottom.
- Home made coconut milk gives unique taste, but you can even use store bought coconut milk.
- After adding, first extracted coconut milk, do not over cook.
