As I posted Udupi rasam | Tomato saaru recipe, my readers requested me to post the Udupi rasam powder recipe as well. Udupi rasam powder is the King as it is used in many of the Udupi recipes like Avalakki upkari, brinjal palya, bitter guard palya and many more. If you have this powder handy, you can prepare a simple rasam without toor dal in a jiffy. So here I go with Udupi rasam powder.
Udupi Rasam Powder Recipe | Rasam Podi | Saarina Pudi
Servings: 250 gm
Ingredients
- Coriander seeds- 1/4 cup
- Cumin seeds- 1.5 tbsp
- Fenugreek seeds- 1 tbsp
- Red chillies byadagi variety- 15-20 nos.
- Curry leaves- 3 to 4 strands
- Coconut Oil- 2 tbsp
Instructions
Method
- Heat a pan adding oil and red chillies. With constant stirring roast them till they puff up. Transfer to a plate and next roast the coriander seeds followed by cumin seeds.
- Finally roast the fenugreek seeds along with curry leaves. Let all the roasted ingredients cool down to room temperature. Then powder them together to fine texture.
- Now the Udupi rasam powder is ready. Let it cool and store it in a air tight container.
Note
- Roast each ingredient separately and ensure it is not burnt.
- The spices should be roasted in medium flame with constant stirring otherwise they easily get burnt.
- I have used only byadagi variety chillies which is mild in spice.
- Standard measurements in terms of gram: Red chilly- 100 gm, Coriander seeds- 75 gm, Cumin seeds- 25 gm and Fenugreek seeds- 25gm

Use byadagi variety red chillies. If you want spicy rasam then you can include 50% of Guntur variety red chillies.

Does keeping the rassam and sambar powder in the refrigerator increase their shelf life? How long can they be stored outside?

These powders can be stored outside refrigerator for more than a month. You can store even after, but the flavor and aroma reduces significantly. I don’t refrigerate them normally.

Isn’t the fenugreek too much? I would say half the quantity you have given.
