Rava Kesari | Kesari Bath | Sooji Ka Halwa Recipe

          Home is the reflection of Indian family’s life and pride. We never let  a visitor without warm hospitality and care. We always try to make our guests truly comfortable and secure. At this moment I recall a saying in Sanskrit “Athiti Davo Bhava” meaning  “Guests are truly your God”. Having said all this, when unexpected visitor knocks our door, then we just think of easy snacks and sweet recipes which can be made in a jiffy. Rava Kesari / Kesari Bath comes very handy in these moments and can be prepared within 20 to 25 minutes. This easy sweet is also known as Sheera and sooji ka halwa. In Udupi rava kesari is usually prepared as one of the breakfast sweets along with main course. Lets have a look at kesari bath recipe.

Ingredients

  • Medium Rava/Sooji- 1 cup
  • Sugar- 1 cup
  • Ghee- 1/2 cup
  • Cardamoms- 2 no.
  • Turmeric powder- A pinch
  • Cashews and raisins- handful

Instructions

Preparation

  • Deseed cardamoms and powder them finely.

Method

  • Heat a pan adding a teaspoon of ghee and cashews. Roast the cashews till they slightly change in color. Transfer it to a container and add raisins to the same pan. When they puff up remove them too.Now add one more teaspoon of ghee and sooji/rava to the same pan. Roast it, till you get nice aroma in low flame. Ensure it is not burnt. It may take 4 to 5 minutes. Transfer the roasted rava to a plate.
  • Add 2 cups of water to the same pan. Add turmeric too and let it boil.When water starts boiling, gradually add roasted rava stirring continuously. Rava gets cooked in water and absorbs all the water.
  • That is when you need to add sugar, mix well stirring continuously. There are chances of lumps formation now, keep braking them with back of the ladle and continue stirring.
  • Add rest of the ghee, roasted cashews, raisins and cardamom powder now. Mix well. When ghee gets blended with rava, it starts leaving the pan. Now switch off.
  • Rava kesari/Kesari bath is ready. Serve it hot, it just melts in your mouth.

Note:

  • Rava should get cooked well in water, only then you need to add sugar. Otherwise the rava kesari will be sticky.
  • Do not compromise with ghee, it makes the rava kesari non sticky. You can use more ghee than recommended but not less for sure.
  • Along with cashews and raisins you can add broken almond too.
  • You can use food color substituting turmeric powder. But I prefer the latter. Rava kesari is equally good without any color also.
  • If you want to make pieces, transfer kesari bath to a ghee greased plate after the last step. Mark pieces using knife.
  • Rava to water ratio is 1:2. When you are doing in large quantity add water according to this proportion.

    Is quantity of water (twice the quantity of rava) as suggested by you is enough for the rava to get boiled properly?
    Can we add Kesari (safron) instead of color/turmeric powder?
    I was told that Chiroti Rava also can be used for Rava Kesari.Is it true?
    I was told that pinch of table salt gives a good taste in Rava Kesari.Is it true?

      Of course it is enough to cook rava.
      You can add safron, chiroti rava can also be used replacing medium rava.
      It’s a practice to add pinch of salt in all sweets, but I do it for some specific ones.

    Thank you for the recipe. I tried this recipe as described. It turned out delicious. I used milk instead of water and a little less sugar (1/3 Cup). I would recommend readers to give it a try.

    I used saffron in water vs turmeric and added half a cup of Sugar vs. 1 cup… The results were great and family loved it
