Watermelon Rind Dosa | ಕಲ್ಲಂಗಡಿ ಹಣ್ಣಿನ ಸಿಪ್ಪೆಯ ದೋಸೆ

- 1 Cup Raw Rice
- 2 tsp White Lentils
- 1 tsp Fenugreek seeds
- 1.4 cup Rice flakes
- 2 cups Watermelon rind cubes
- 1 tsp Salt
Rinse and soak rice in enough water for about 4 hours
Rinse and soak lentils, fenugreek seeds and rice flakes together in water for about 4 hours
Add lentils, fenugreek seeds, rice flakes and watermelon rind in to a mixer jar. Grind them all together without adding water. Transfer the batter in to a vessel.
Next, add soaked rice to same mixer and grind finely with only little water. Transfer this batter to the same vessel as above and mix well. Let it rest in warm place for about 8 hours for fermentation.
The fermented batter would have raised in volume. Add salt and mix well.
Pour ladle full of batter on hot griddle and cook for few minutes. Remove and serve hot with coconut chutney and sambar of your choice.
Do not add much water while grinding as watermelon contains lot of moisture. And that is enough for ease of grinding.
Let the batter ferment for good number of hours otherwise dosa will not turn spongy.
