Moong Dal Recipe in Udupi Style

Ingredients

  • Moong dal- 1/2 cup
  • Ginger- 3" piece
  • Green chillies- 4 nos.
  • Coriander leaves- handful
  • Lemon medium sized - half

Seasoning Ingredients

  • Cumin seeds- 1 tsp
  • Oil - 1 tsp
  • Ghee- 1 tsp
  • Broken red chilly- 1 no.
  • Curry leaves- 1 strand

Preparation

  • Pressure cook moong dal adding around a cup of water. I cooked it for 3 whistles,then in simmer for 5 minutes.
  • Chop green chillies, ginger, curry leaves and coriander leaves very finely.

Method

  • Mash cooked moong dal and transfer it in to a vessel. Add a cup of water and turmeric powder. Cook it in medium flame.
  • Now heat a seasoning pan, add ghee as well as oil then cumin seeds, chopped ginger, green chillies and curry leaves. When the green chillies change in color, switch off. Add this seasoning to moong dal which is cooking in medium flame.
  • Now add salt and mix well. Switch off the flame. Squeeze half of lemon to moong dal.
  • Moong dal is ready. Serve it hot with steamed rice and idli. Perfect side dish for both.

Note:

  • Unlike other curries, dal has to be thick. But consistency is completely individual's choice. Add water accordingly.
  • Dal usually tastes mild, you can increase green chillies for more spiciness.
  • You can add asafoetida too.
