Instant Medu Vada | Instant Vada Recipe
Medu vada is a south Indian snack which needs soaking lentils beforehand. But this instant medu vada is very handy that can be whipped up quickly within 15 minutes and needs no pre-soaking. Crispy and tasty vada for tea time. Must try.

- 1/2 cup Rice flour
- 1/2 cup Yogurt
- 1/2 cup Water
- 1/2 tsp Salt
- 1 tbsp Ginger grated
- 2 tsp Green chillies
- 1 tbsp Curry leaves
- 2 tbsp Coriander leaves
In a bowl take yogurt and water. Whisk them together well.
Next add rice flour and make lump-less batter. Next add grated ginger, chopped green chillies, curry leaves and salt.
Mix them together and transfer to cooking pan. With constant stirring, cook it in medium flame. It thickens and comes together.
Add chopped coriander leaves and mix well. When dough is thick enough to make ball, switch off flame and transfer to a plate.
Next shape the medu vada and drop in to hot oil one by one. Deep fry till golden brown and relish with tea/coffee.
Crispy instant medu vada is ready to serve.
- When you cook the batter, keep stirring otherwise it sticks to the pan.
- When the batter gets to the consistency of dough, switch off the flame.
- You can add crushed black pepper for enhanced taste.
