Veg Cutlet | Vegetable Cutlet Recipe
Very healthy and tasty veg cutlet is apt for evening snack with a cup of tea or coffee. Tomato ketchup and mint chutney are the best accompaniments with this snack.

- 1/2 cup chopped carrot
- 1/2 cup chopped beans
- 1/2 cup chopped beetroot
- 1/4 cup green peas
- 1/2 cup potato
- 1/2 cup breadcrumbs
- 2 tbsp cornflour
- 2 tsp chopped green chillies
- 1 tsp chopped ginger
- 1 tsp salt
- 1/2 tsp cumin powder
- 1 tsp red chilly powder
- 1/2 tsp garam masala
- 1/2 tsp aamchur powder
- 2 tbsp coriander leaves
- 2 tbsp oil
Pressure cook all the vegetables like carrot, beans, beetroot, peas and potatoes without adding any water.
Drain the water and mash cooked vegetables very well. Add breadcrumbs, cornflour, green chillies and ginger.
Next add all the spice powders like red chilly powder, salt, garam masala, aamchur powder, cumin powder and coriander leaves. Mix stiff dough. You can include some more breadcrumbs if needed to get the stiff dough.
Now using cutlet cutter, shape the cutlets. Coat each one with fine rava and shallow fry in some oil till they turn golden brown.
- You can add the vegetables of your choice like cauliflower and cabbage.
- Do not add water to cook vegetables. Before mashing, ensure all moisture is drained off.
- Breadcrumbs binds all veggies together. So do not skip it. If needed, you can add some more of it.
- You can even deep fry the cutlets in enough oil.
