Ingredients
Fresh tender lady's fingers- 8 to 10 no.s
Yoghurt- 1 small bowlshown in picture
Salt- 1 teaspoon
Green chilly- 1 no.
Cooking oil/coconut oil- 4 tea spoon
Seasoning ingredients
Cooking oil- 2 tea spoon
Mustard seeds- 1/2 tea spoon
Split black gram- 1/2 tea spoon
Red chilly- 1 no.
Curry leaves- few
Instructions
Preparation
Wash and pat dry the lady's fingers. Remove head and tail, then slice them in to circular pieces as shown in pictures below.
Method
Heat a pan/kadai adding 3 teaspoon of coconut oil and sliced lady's fingers. Fry them till they are caramelized. Switch off and transfer them to a vessel.
Mean while whisk the yoghurt adding some water as per the consistency needed for bhindi raita.
Heat a seasoning pan adding all the ingredients listed under "seasoning ingredients" and slit green chilly, when the mustard seeds splutter and split black gram turns little brown add the seasoning to whisked yoghurt. Add salt as well and mix it.
Just before serving bhindi raita, add the caramelized lady finger slices.
Easy and quick lady finger recipe bhindi raita/Bendekayi raita is ready. Serve it with steamed rice. Crispy, crunchy caramelized okra slices taste heaven with yoghurt!!!!!
